Gutenprint on Mac OS X would not be possible without CUPS, the open-source print spooler built-in for Mac OS X starting with version 10.2 (Jaguar). Gutenprint is strictly a printer support package. For multi-function devices, it supports only the printer function. The last release that will work under Mac OS X 10.2.x (Jaguar) is 5.0.2. If on the Mac you set the Input Source to 'German Standard' (and not 'German'), then you will have @ produced by Option/alt Q and € by Option/alt E.
